Parchment "Tilapia" in coconut milk with fresh coriander

Papillotes d'aiglefin au lait de coco garni de coriandre fraiche. Sound better in French doesn't it? 

I used Tilapia, that's about the only change I brought. I guess you could use any white fish of your choice.
1/4 cup coconut milk
2 tbsp lime juice
1 tsp fresh ginger
1/2 a garlic clove
4 fish filets about 6oz each, no skin.
4 aluminum foil sheets
2 tbsp of fresh coriander
salt and pepper

This can be cooked on the BBQ or in a 350F oven.
Mix milk, lime juice, ginger and garlic. Set aside.
Place a filet in each aluminum sheet. Pour sauce evenly over each filet. Salt and Pepper.
Seal foil well. Cook on BBQ 5-10 min, or 20 min in oven.
Garnish with fresh coriander and serve.
White basmati rice and Sautéed green beans with lemon goes well with this dish.
