Lentil and tomato soup

It was almost 10C outside today, no wind, my balcony door was open part of the morning while I was making this delicious soup.

1/4 cup red lentils
2 cups chicken broth
1/2 a red onion chopped
1/2 cup of cubed tomatoes
1/2 tsp of curcuma
1 clove of garlic
1/3 cup coconut milk
fresh coriander for garnish
juice of 1/2 a lime
1 tbsp of olive oil

Sauté onion in oil 3 min, add garlic, curcuma and sauté 1 min. Add lentils, broth and tomatoes. Bring to boil, reduce and simmer 15 min to cook lentils. I had to add almost 1 cup of broth because the lentils soaked up a lot of broth. Or else, next time only 1/4 cup of lentils.

When ready, remove from heat add coconut milk and lime juice. Garnish with coriander when serving.
