Oven fried Onion Rings

2 Spanish onions, cut into 1/4 inch slices.
6 tbsp of oil
30 crackers
4 cups of BBQ Kettle chips (you can use any flavor)
1/2 buttermilk at room temperature
1 egg, room temperature
1/4 cup high heat tolerance oil.
Chili pepper, salt.

Preheat oven to 450F.

Beat egg and buttermilk together, add in chili pepper, salt and 1/4 cup flour.
Place crackers and chips in food processor and finely grind to a texture of coarse salt.
Put some flour in a shallow dish.

Pour oil in 2 rimmed cookie sheets, place in preheated oven for 5 min. No more, it will burn and stink.

Take a few onion rings at a time, dredge in flour, shake off excess, dredge in egg mixture, then in chip and cracker mixture. Repeat with all rings.  Place rings on hot cookie sheets to form one layer.
Cook for a total of 15 min flipping once at half time.

Serve with a dip of your choice. I mix Dijon, mayonnaise and maple syrup.
