Oven fried Onion Rings
Beat egg and buttermilk together, add in chili pepper, salt and 1/4 cup flour.
Place crackers and chips in food processor and finely grind to a texture of coarse salt.
Put some flour in a shallow dish.
Take a few onion rings at a time, dredge in flour, shake off excess, dredge in egg mixture, then in chip and cracker mixture. Repeat with all rings. Place rings on hot cookie sheets to form one layer.
Cook for a total of 15 min flipping once at half time.
